
Dough :
250 ml (1 cup) lukewarm water
5 ml (1 tsp) instant yeast
5 ml (1 tsp) sugar
300 g (2 cups) unbleached all-purpose flour
5 ml (1 tsp) salt
Preparation :
In a bowl, combine the water, yeast, and sugar. Let it sit until foamy on top, about 5 minutes.
If using a food processor, it's important to use the plastic blade or dough hook. Combine the flour and salt. With the processor running at medium speed, add the yeast mixture and mix until a soft dough forms.
Remove the dough from the bowl and knead on a lightly floured work surface for a few minutes. Shape the dough into a ball and place it in a clean, lightly oiled bowl. Cover with a clean cloth and let it rise for 30 minutes in a warm, humid place.
Divide the dough in half. Use the pizza dough immediately, or wrap it in plastic wrap and refrigerate (for up to 48 hours), or freeze.
This recipe will make two 9-inch (23 cm) thin-crust pizzas or two 8-inch (20 cm) thicker-crust pizzas.
