lately my main meals have been looking like this: a small portion of quinoa, beets or any other veggies, and yesterday i tried making lentil and pea falafel for the first time — and it’s so good! especially with hummus and sauce, and of course sprinkled with seeds.
i realized it’s important for me to have a choice of foods on my plate that i can eat one by one, because before i used to just mix everything in one bowl lol and never really felt satisfied. looks like i’ve finally found my groove hahahaha 😄✨
Ingredients:
- 7 oz (200 g) lentils, soaked in water for 1 hour
- 2 oz (50 g) canned peas
- 1 red onion
- 2 garlic cloves
- a bunch of cilantro
- 1 tbsp tahini (optional)
- spices: salt, cumin, pepper, and your favorites
Instructions:
- Blend everything in a blender (I prefer an immersion blender).
- If the mixture is too runny, you can add 1 oz (30 g) flour — I didn’t need to.
- Fry in oil until golden and crispy.
It turns out super delicious! 😋 Now I can’t even decide whether I like chickpea falafel or lentil falafel better!
