Cut skinless pork belly strips into large-ish cubes (They shrink a little)
Coated on all sides with yellow mustard.
Coated on all sides with Sweet Preacher pork rub. (Or rub of choice)
250° F in oven on a wire rack (If possible, fat side up) for 3 hrs.
Transfer to disposable aluminum roasting pan.
3 tbsp butter cut into 3 chunks placed in 3 spots
squirt honey across cubes
sprinkle brown sugar across cubes
BBQ Sauce across cubes
Back into 275°F over for 30 more minutes.
Nap.

    There isn’t enough burnt ends or pork belly in the world to ever be “too much”!
