[homemade] broiled oysters

  1. Ingredients

    • Fresh oysters, shucked (kept on half shell)

    • 4 tbsp unsalted butter

    • 1 whole head garlic, finely chopped

    • Fresh parsley, finely chopped

    • Freshly ground black pepper

    • 1 oz Parmigiano-Reggiano, finely grated

    • Lemon wedges (optional)

    Step 1: Prepare Garlic Butter

    In a small saucepan over low heat:

    Melt butter and add garlic.

    Cook gently 2–3 minutes until aromatic.

    Do not brown.

    Season lightly with black pepper.

    Remove from heat.

    Step 2: Prepare Oysters

    • Shuck oysters carefully.

    • Detach oyster from shell for easy eating.

    • Arrange on tray or rack so shells sit level.

    Spoon warm garlic butter into each oyster, allowing butter to combine with natural oyster liquor.

    Step 3: Bake

    Preheat oven to 500°F (260°C).

    Bake oysters for 5–6 minutes until:

    • oysters just begin to firm

    • butter bubbles actively

    • edges barely curl

    The oysters should remain plump and juicy.

    Step 4: Traditional Finish

    Remove tray and top each oyster with:

    • grated Parmigiano-Reggiano

    • chopped parsley

    Return to oven under high broil for 30–90 seconds, until cheese melts and lightly browns.

    OH GOD YES. This is the only way I’ll eat oysters, and I have never been presented with a quantity of these large enough to make me stop.
