
Tonight's dinner was delicious! I used Nora Taylor's stew recipe here: https://www.noracooks.com/mushroom-bourguignon/; for the mash I just kind of winged it—
1 head cauliflower
2 wedges Laughing Cow PB garlic-herb cheese
~1 cup shredded vegan parm (I used Violife)
Probably more pepper than was wise
Break cauliflower into florets, including the stems, and steam for about 10 minutes. Toss half the florets into a blender (remember you're blending a very hot ingredient, so be sure to vent it occasionally!); blend until smooth, then add one cheese wedge and half the Parmesan. Scrape out the blender jar into a bowl, and repeat with the remaining cauliflower and cheeses. Stir in the pepper & serve!
