My written recipe:

Celebrate Pancake Day with Vegan Pancakes that are easy to make and have only 3 ingredients.

Vegan Pancakes (Makes 10 medium or 5 large)

Ingredients:

2 cups (250g) Self-Raising Flour

1/2 cup (100g) Sugar

2 cups (500ml) Plant Milk

Method:

  1. Add the self-raising flour and sugar to a bowl, stir to combine.

  2. Pour in the plant milk while whisking, until a smooth batter is formed.

  3. Add a small amount of oil or cooking spray to a frypan, heat over medium heat until warm.

  4. Pour in the pancake batter (around 1/3 cup to 1/2 cup per pancake).

  5. Cook for a few minutes until the bubbles form all over and then pop.

  6. Flip the pancakes and cook until both sides are golden.

  7. Repeat with all of the batter adding a little oil each time before adding the batter.

  8. Stack the cooked pancakes up, add vegan butter and syrup. Enjoy and happy Pancake Day.
