You know, I have never understood the need to leave the shells on when shrimp is an ingredient in a noodle dish. I understand the tradition of showing its real, fresh shrimp, but we have food safety inspectors now (not that they are perfect). The need to pull shells off prior to or while I eat my noodles is just an extra annoying step to me.
