

This is high in protein and super delicious to knock up for a quick dinner with leftovers for work! inspired by a recipe by browngirlvegan but only loosely as I wanted it less spicy.
Sauce:
in a food processor blend:
1 block silken tofu
1 teaspoon mushroom seasoning
1 tbsp white miso paste
splash of white whine vinegar
crushed clove of garlic
salt and pepper
ladle of your pasta water
Tofu crumble:
crumble smoked tofu block into frying pan with oil
add 1 tbsp each of soy sauce, liquid smoke, garlic powder
salt and pepper
cook until it's caught colour all over
mushrooms just cook until soft and then add a clove or 2 of garlic just towards the end.
combine the mushrooms, cooked pasta and sauce. top with your crumble and dig in!
