
Ingredients
1 large carrot
1 yellow beetroot
1 candy beetroot
1 purple beetroot
¼ celeriac (approx.)
1 red pear
½ red onion
1 stick of celery
1 handful of flat leaf parsley
1 handful of walnuts
For the dressing:
Juice of half a grapefruit
1 tbsp apple cider vinegar
2 tbsp extra virgin olive oil
1 tsp grainy mustard
1 tsp sea salt
1 tsp honey
Is this the prettiest slaw you’ve ever seen? It’s super-high in antioxidants from the reds, purples, oranges and yellows, and tastes delicious to boot.
Method
1. Shred the red cabbage, and finely chop the red onion and celery. With a julienne peeler, make matchsticks from the beetroots, carrot and celeriac – or use an ordinary peeler to make fine shavings. Cut the pear into wedges.
2. Whisk all the dressing ingredients together and combine with all the salad ingredients.
Serving suggestions / options to serve:
Ø Fantastic as a side with any of our burgers, or grilled salmon or tuna steak.
