I have a coppa that’s been in my drying chamber for about 3 weeks. It’s a new chamber and this was the first piece that went in it. It’s developed some light blue mold that I think is blooming penicillium, but not sure. There are white splotches without the blue in the other side of it.

The two sausages on either side of it were inoculated with Mold 600, but this has not. There is no casing on it either. The texture of the mold feels similar to the mold on the sausages.

Should I wipe with vinegar, toss it, or let it ride?
