Recipe:

14 oz penne pasta

2 Tbsp butter, for sautéing

1 medium sweet onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

12 oz plant based mince

2 1/2 tsp onion powder

2 1/2 tsp garlic powder

2 Tbsp Italian seasoning

1/2 Tbsp dried basil

2 tsp black pepper

1 1/2 tsp salt

24 oz tomato basil pasta sauce

14.5 oz diced tomatoes

3/4 cup vegetable broth

4 oz plant based pepperoni

Plant based mozzarella cheese, for topping

  1. Preheat oven to 350F.

  2. Cook pasta in boiling water with salt (about 2 tsp) according to packet instructions.

  3. Meanwhile, add butter to a large pan over a medium-high heat. Once melted, add onions and both peppers then sauté.

  4. Add plant based mince meat followed by all spices. Stir to combine and cook for another 3-4 minutes.

  5. Add pasta sauce, diced tomatoes, and broth. Mix then add cooked & drained pasta. Stir to combine again until everything is incorporated.

  6. Sprinkle mozzarella cheese over then top with pepperoni. Place in oven and bake for 30 minutes or until cheese is fully melted. Remove and serve hot. Enjoy!
