This weekend I had a vegan friend coming over for a cozy breakfast at my place, and I wanted something warm, comforting, and a little bit special, but still simple.

So I made homemade vegan crumpets. Golden on the bottom, full of bubbles on top, soft like little pillows inside. We ate them warm with vegan butter and homemade raspberry jam and honestly… peak cozy vibes.

Ingredients (makes about 6 crumpets)

– 250 ml soy milk

– 165 ml water

– 1 tsp instant dry baker’s yeast

– 1 tbsp sugar

– 300 g all-purpose flour

– 1 tsp salt

– 2 tsp baking powder

– 15 g vegan butter

In a bowl, pour in the lukewarm soy milk and lukewarm water (it should feel slightly warm, around 40°C / 104°F not hot).

Add the sugar and the dry yeast. Let it sit for 5 minutes to rehydrate. A light foam should form on the surface.

In a large mixing bowl, whisk together the flour, salt, and baking powder.

Make a well in the center and pour in the yeast mixture in two additions, whisking well each time to prevent lumps.

Whisk vigorously until you get a smooth, slightly elastic batter.

Then whisk for another full 2 minutes to help develop the gluten network, this step helps with the structure and bubbles.

Cover the bowl with a clean kitchen towel and let the batter rest for 1 hour in a warm place (near a radiator or inside a turned-off oven).

Cook the crumpets :

Heat a lightly greased pan over high heat using some of the vegan butter. Grease your ring molds as well.

Place the rings into the very hot pan and pour a ladle of batter into each one.

Reduce the heat to medium-low (about 4/10). Let them cook on the first side until there is no liquid batter left on the surface. This takes about 10 minutes. You’ll see the characteristic bubbles forming and setting on top.

Carefully remove the rings, then flip the crumpets and cook for 1 more minute on the second side.

Serve warm with vegan butter and jam.

You can also let them cool completely and freeze them in freezer bags, just toast straight from frozen when you need a cozy breakfast moment.
