Recipe
-Boil water, add a ton of salt and a bit of olive oil.
-Slice a few garlic cloves, add that and a pinch of red pepper flakes to an unheated skillet that’s deep enough to add pasta to – the bottom of the pan should be coated with a nice olive oil
-Once the pasta is halfway done drain it and reserve the pasta water
-add the pasta to the skillet along with a ladle of pasta water
-slowly add pasta water as needed, cook the pasta to al dente, you’re looking for a nice silky emulsified texture
-once the pasta is done cooking add a knob of butter and slowly work it in
-top with chopped Italian parsley, pecorino Romano (or w/e hard cheese you prefer), and salt + pepper to taste
