As a lifelong Montrealer, I’ll assert there are no hard and fast rules for poutine outside a base of properly cooked fries, cheese curds, and gravy. Anything else one adds is completely fine.
You virtually never see restos in this city with only straight-up poutine on the menu and places specializing in poutine go to town with their many varied takes on the beloved dish.
