My written recipe:

Vegan Beetroot Burgers Recipe (makes ~10)

Ingredients:

500g Potato (chopped),

1/2 cup dried OR 1 cup cooked Quinoa,

500g Fresh Beetroot (grated),

1 tbsp Oil,

1 Onion (diced),

1 tbsp Garlic (minced),

1/2 tsp Salt,

1/2 tsp Pepper,

Method:

  1. Chop potatoes (can leave the skins on), add to a pot of water along with the dried quinoa (*see note below). Place on high heat for 15-20 minutes or until cooked. Remove the lid once the water begins boiling.

  2. Meanwhile, dice the onion, and grate the beetroot. Squeeze some of the beetroot juice out of the beetroot to prevent soggy burgers.

  3. Heat the oil in a pan on medium heat, once warm cook the onions for a few minutes until softened.

  4. Add the garlic and beetroot to the pan and cook for 5 minutes, then turn off the heat.

  5. Once the potatoes and quinoa are cooked, drain, then add to a large bowl.

  6. Add in the beetroot mixture to the bowl, season with salt and pepper and mash everything together.

  7. Place in the fridge to cool for at least 30 minutes.

  8. Shape into burger patties (it makes around 10) with your hands.

  9. To cook, airfry or oven bake at 200C or 390F for 30 minutes, flipping after 15 minutes. Or panfry or barbecue the burgers until browned on both sides (roughly 5 minutes each side).

  10. Add to a burger bun with your favourite fillings and enjoy.

*Note: If using leftover cooked quinoa, the measurement is 1 cup and you won't need to cook more in step 1. Add the leftover quinoa to the bowl with the cooked potatoes and beetroot mix in step 5/6.
