first time ever making this but it turned out so cute!

been trying 1200 for the last 2ish weeks and this shit is so much harder than i thought but this sub has helped a lot with meal inspo so thought i'd add this. i'm trying to mini cut for the first time for 2-3 months so felt like i should put more care into my food. i've been eating a korean sweet potato everyday and been 'scared' of a potato but found out they've won the satiety index and are not even that much in calories so hopefully this helps cravings. also this tortilla is great cos you can eat it for any meal or even add it as a snack. traditionally you don't add anything else other than onions (there's a whole battle if u even add onions) but decided to add some peppers and surely you can add whatever you please, you're the one eating it

* used oil spray so +/- 20 calories per serving maybe? but ymmv depending on what oil you use. personally am not bothering with counting it

wrote a little recipe but please feel free to roast it or give me tips šŸ™‚

  1. peel and wash potatos & pat dry (reckon it’s best to do this way prior so all the moisture is gone) → put in air fryer i think 300 for 15-20min checking every couple minutes. you don’t want them crispy/burned but pretty cooked through but do what suits. then i added it to a pan and cooked it even further to the breaking but not mushy state
  2. thinly slice onions and over super low heat get it to the breaking down state then add in frozen peppers and onions (if u want) then take onions to almost caramelized state
  3. get all the eggs + whites into a bowl, salt & pep (add whatever seasoning u want) and mix. fold in the hot potatoes & onions and mash it to whatever small bits and sizes you prefer your potatoes to be. ** let it sit for like 20min (apparently this is the key cos idk her but i trust her https://youtube.com/shorts/3XJHj0dX3Z0?si=p49y4mwBkz2FbiE0)
  4. spray oil the bottom of a nice curvy pan and on low heat (i did 2) let it sit for 12-15min with a covered lid/bowl. get a little spatula to unstick sides/check if its cooked and once it’s less jiggly and more slidey grab a flat plate and just flip it no hesitation then get it back in the pan and cook for a few more minutes uncovered
  5. rest it on whatever to cool it before cutting
  6. eat! yay !
