



1 very ripe breadfruit
Up to 1/2 can of coconut milk shaken well
12 g / 1 tbsp Muscovado Sugar
Pinch of Asian Five Spice
Pinch of coriander
Pinch of Vietnamese Cinnamon
Put all but coconut milk into a food processor or blender with pulse chop. Chop until smooth then add 1/4 can of the coconut milk and get the coconut fat into it. Purée for a few seconds. Taste check. If it is tasting dryer more coconut milk. Pulse again test when it has a pudding consistency, spoon into small cups and refrigerate for at least 30 minutes then serve.
