Not in the recipe: baking soda, sweetener, low cal spray

Method:

  1. Slice the pork

  2. Sprinkle half a tsp of baking soda (this is a tenderiser)

  3. Coat it in soy sauce and corn flour

  4. Air fry at 200C for 5 mins per side

Meanwhile, make the sauce:

  1. In a saucepan, combine ketchup, vinegar, oyster sauce, pineapple juice and sweetener of choice. Adjust to taste.

  2. Add ginger, carrots, onions and garlic

  3. Boil until it reduces/thickens

Add the air fried pork. Serve with rice and/or your choice of veg.
