Potato stew I had a few times in Egypt. They called it a tagine, although I would associate that with Morocco. I note that Egypt’s popular potato dish is Sanyet El Batates.
Tomato based. Lightly spiced. Goes well with rice.
Did it have another name? Tagine is usually the pot they are cooked in made of clay with a tapered top that has a steam hole or sometimes it’s oval. They come in single serving sizes or larger for family style dishes.
