Did I slightly overcook it?

This is how my wife likes her steak cooked.

  1. My immediate reaction is aw man you ruined it. But on closer inspection it does look pretty juicy, and if this is the way the wife likes it then this is the way it’ll be, lol.

    I like a lot more pink than this but that’s my preference

  2. If that’s overcooked then I’ve been committing steak crimes my whole life. Looks perfect to me.

  3. That’s a solid medium-well, and you got a great crust on it. I’d eat it and enjoy it. IMO I take slightly over-cooked (if medium-rare is the goal) with a great crust over perfectly medium-rare with an underdone crust any day. Unsurprisingly, prime rib is one of my least favorite preparations of steak. De gustibus non est disputandum

  4. was this a Costco steak? I’ve found I’ve had trouble with color of the steak matching it’s doneness from mechanically tenderized steaks, especially from Costco. the probe says 125, I let it rest and I cut into it and it’s pink like medium but still a little springy. I’ve even sous vide it to 125, 20 minute ice bath, and hard sear and same results. I’ve told myself I’m not buying Costco steaks anymore, but end up doing it because beef is fucking expensive now

    Bunch of people here probably cook ribeyes rare and think chewing on raw fat is good.

  6. IMO, yes, you overcooked it.

    But, you didn’t cook that for me; you cooked it for your wife and apparently that’s the way she likes it, so good on you, OP.
