
Short sedentary woman wants burger fix: what do?
TL;DR – combine 80g beef, 30g cottage cheese; fry
Burger beef is like 2 calories per gram. Cottage cheese is like 1 calorie per gram. A regular 4oz burger patty (raw) is around 110g. So we take out 30 of that and replace it with drained (mostly curd) cottage cheese. 80g beef, 30g cheese.
Use a slightly leaner mix (I used grassfed 85/15).
Use a NICE cottage cheese (in the US, the only good big brand one is Daisy and I go for their 4% fat one).
Smash it together till it's all mixed in and cook it like a regular smash patty. It will stick a little more so it helps if you already cooked a regular burger for someone else and you can just ride off of their pan grease.
Maybe some of you have already tried this from somewhere else. I do not claim to be original; I am just desperate to burger. I have no picture for you because I ate the patty so fast, that's how desperate I was.
Pros:
- It's already sort of a cheese burger so cheese isn't really that necessary…?
- Cottage cheese is already the texture of ground beef and now it's will also have the flavor of ground beef.
- Leaner beef is drier but even drained cottage cheese has a little bit of moisture to help balance that a little
- You can make it even leaner with fat-free cottage cheese… probably. I haven't tested.
- You can probably use more cheese and less beef if you're into that (but I'd limit it to 70/40 because at some point, it's not really a burger anymore)
- If you hate cottage cheese, this might be your one way to use up the last cup you tried that's still in your fridge… or your invitation to try the Daisy brand because I swear it is the only tolerable one in the supermarket.
Cons:
- You join the cottage cheese meta if you haven't already
- You fall deeper into the cottage cheese abyss if you are already in the cottage cheese meta.
- Good luck finding low calorie bun (I suggest a low carb tortilla, actually, or just one slice of sourdough).
So hypothetically (not hypothetical cause I did this 20 min ago), if I dress it with 4 grams of low carb ketchup (Vivid brand is the best imo), some diced tomatoes, diced onions, and a quarter of an avocado, it comes out to like 250-260 calories, so to fit it into your 350cal meal, you just need to find 100cal bread.
… I ate it without bread because I wanted to save room for ice cream.
