I often hear that eating plant based is expensive. I tend to shy away from complicated recipes with more expensive ingredients. I took a baked sweet potato for a base, then added some steamed spinach, topped it with chickpeas and drizzled a simple sauce made with cashews, nutritional yeast, lemon juice and water. Also steamed a bit of broccoli to go with. $5-$6 tops. 🙂
