Hi all, these are about three weeks old, they were fully white fluffy now they are going yellow and waxy, what is this, is it normal, they smell fine just not sure what's happening.
They are at 13 degrees C and about 60ish rh.

Any idea what this yellow, waxy substance is?
My salami are doing that after nearly 3 months. My guess is the mold has eaten everything it could and is simply dying off. If anyone knows different, please chime in!
Its no issue, aging white mold or it adapting to its surroundings is normal
