The new learning point from this bread:

The general formula I am using for quick breads is:

  • Equal parts liquid thing (banana, sweet potato, etc) and flour
  • Sugar = add-ins (eg sprinkles, coconut) = 1/2 of the flour
  • Oil = 1/4 flour
  • 1 tsp of baking powder per cup of flour

If the โ€œliquid thingโ€ is dryer, like sweet potato, then it gets more oil but also needs more baking powder.

So for this one I used 1/4 cup of sweet potato, 1/4 cup of flour, 1/8 cup of sugar, 1/8 cup of sprinkles, 1.5 tbsp of oil, 1/2 tsp of baking powder and a bit of cinnamon.

Mix that all and bake it at 350 F for 30 minutes.
