


Socca with hummus and spiced roasted vegetables.
I usually have mushrooms but I ran out so subbed courgette.
A really simple recipe made from Besan (chickpea flour) and fried in a tiny bit of oil.
Top it with whatever you like but It tastes so much better with hummus than without.
A non stick pan is a must, as it will stick like concrete otherwise!
I add 1/2 tsp oil to the batter and 1/2 a tsp to the pan to crisp it up a little
