
Wanted something easy for dinner and threw this together last night! š
Ingredients (1 serving):
- Sweet potato fries, 120g (I used frozen)
- Extra-firm tofu (pressed), 130g
- Chickpeas (cooked), 30g
- Zucchini (sliced), 80g
- Red bell pepper (sliced), 60g
- Olive oil, 5g (1 tsp)
- Garlic powder, smoked paprika, salt, pepper
- Lemon juice, 10g
total: 364 cal
macros: 16g protein, 39g carbs, 17g fat
Instructions:
- Baked the sweet potato fries at 400°F for 15-20 min until crispy (air fryer works too, about 10-14 min)
- Pressed and cubed the tofu, seared it in a pan with a bit of olive oil until golden, seasoned with salt and pepper
- Sauteed zucchini and bell pepper in another pan for 5-7 min, added chickpeas with garlic powder and smoked paprika, cooked a couple more minutes
- Put everything in a bowl and squeezed lemon juice on top
