  1. Get a food ricer and look up Joël Robuchon’s recipe for pomme puree. It’s an intimidating amount of butter but you’ll never look at mashed potatoes the same…

  2. Is that mash or some kind of potato sauce, it looks like if you tilted the plate slightly you’d be wearing it.
