Recipe:

Yields: 16

▢ 1 1/4 cups all-purpose flour (or gluten free flour)
▢ 1 tsp baking soda
▢ 1 tsp cinnamon
▢ 1/2 tsp salt
▢ 3/4 cup (1 1/2 sticks) vegan butter, room temp.
▢ 3/4 cup organic sugar
▢ 1/2 cup brown sugar, packed
▢ 2 flax eggs
▢ 1 tsp vanilla extract
▢ 2 1/4 cup rolled oats (or gluten free oats)
▢ 1 cup raisins
▢ 1 cup dried cranberries
▢ 1/2 cup pumpkin seeds
▢ 1/2 cup walnuts, roughly chopped

  1. Preheat oven to 350°F. Parchment line two baking trays.

  2. In a mixing bowl, add all dry ingredients (first 4 ingredients). Whisk to combine.

  3. In another bowl, add butter and both sugars. Beat until light and fluffy. Add flax eggs and vanilla, beat until just combined. Add dry mixture and beat until combined again.

  4. Add oats and mix to incorporate. Add raisins, cranberries, pumpkin seeds, and walnuts then fold in. Scoop onto baking trays.

  5. Bake for 20-22 mins or until golden brown. Let cool and serve.
