Ingredients
- Olive oil
- 2 cups vermicelli
- 5 cups chicken stock
- 1 cup peas and diced carrots
- Salt to taste
- 1 cup chopped parsley
Directions
- Heat a pot over medium heat and add a drizzle of olive oil.
- Add the vermicelli and stir until lightly toasted.
- Pour in the chicken stock, then add the peas and diced carrots.
- Season with salt to taste, mix well, cover, and bring to a boil.
- Let the soup cook until the vermicelli softens.
- Stir in the chopped parsley, cover again, and let it cook a little longer.
- Once everything is tender and fragrant, serve and enjoy.
