Ingredients for 1 serving =

For the dough:

•370 g flour

•250 ml lukewarm water

•2 tbsp sugar ( white or brown )

•1 tsp dry yeast ( normal yeast works too )

•2 tsp salt

•1 tbsp olive oil

•Fat for greasing the pan ( I used butter )


For the garlic coating =

•4 garlic cloves

•5 parsley stems

•4 thyme sprigs ( dried, if you only have fresh ones, you can dry them on low heat in a pan ! )

•90 g cheese (strong-flavoured, e.g., mountain cheese) => I used parmesan cheese

•50 ml olive oil

•Salt

step by step =

1.- In a bowl mix the lukewarm water ( 250 ml ) with sugar, dry yeast and two tablespoons of flour and let it sit for 15 minutes.

2.- In a seperate bowl mix flour and salt, add the yeast mixture ( after letting it sit for 15 minutes ) and add one tablespoon of olive oil.

3.- knead the dough for 5-10 minutes.

4.- clean one of the bowls and put oil on the inside walls so the dough won't stick then put the doigh inside, cover with cling film and let it rest for 1 hour.

5.- Preheat your oven ( 200°C or 392°F top/bottom heat ).

6.- In the meantime peel the garlic and chop it up ( or use a garlic press ) ,
remove the stems from the parsley and chop it up
remove the thyme leaves from the stem and dry the thyme in a pan on low heat ( or use dried thyme from the store ). cut the parmesan cheese into small pieces. mix everything with 50 ml olive oil and add a sprinkle of salt.

7.- grease a springform pan with butter or just put baking paper inside the pan.

8.- knead the dough and shape it into a roll.

9.- cut the dough into equal size pieces ( should be about 7 ) and shape them into little balls.
! I advise putting a tiny bit of olive oil onto your hands before shaping so the dough wont stick to them !

10.- roll your dough balls in the garlic cheese mixture.
Don't be stingy, make a thick coating!

11.- put the dough balls into the springpan ( mine has a diameter of 20.5 cm / 8.07 inches ) .

12.- bake on middle baking rack for 35 minutes ( 200°C top / bottom heat ) or [ 392°F ].
