



First time using a recipe made by chatGPT and it actually worked! I just told Chat what ingredients I had on hand and it whipped this up. Only change I made was doubling its recommendation for the crust and adding like a teaspoon of lemon juice to the batter.
The recipe made three of these li'l cheesecakes in my 4-inch springform pans. Each one is 361 calories, 20.7g fat, 11
3g fiber, and 25.6g protein (before toppings).
For crust:
.5 cup Fiber Gourmet flour
2 tbsp Challenge Avocado Oil butter
2 tbsp nonsugar sweetener
For batter:
1 cup lowfat Good Culture cottage cheese
8oz reduced fat cream cheese
6 tbsp egg whites
1 egg
1 tsp vanilla
1 packet sugar free cheesecake pudding mix
Preheat oven to 325°. Melt your butter (I love Challenge Sea Salt Spreadable Butter with Avocado Oil, 80cal per 14g tablespoon, but you can use light butter for even fewer) and mis in your flour and sweetener (Fiber Gourmet flour is half the calories of regular so it's my preferred flour). Pat it into the bottom of your springform pan(s) and cook for 10-15min until sides brown a bit.
In a food processor, blend your cottage cheese smooth. Add your egg and egg whites (or all egg whites to reduce calories further), vanilla, SF pudding mix, softened cream cheese, and optional lemon juice/extra sweetener if desired. Blend and pour over cooled crust.
I cooked my 3 springforms for about 33 minutes, then turned off my oven, cracked the door, and let them set for another 20 before moving them to the fridge to chill overnight.
I froze one and the other two have been eaten with sugar-free jam and raspberries. I think the third one is gonna get bananas and whipped cream. I'll DEFINITELY be making these again, but I might do like a 2:1 ratio of cottage cheese to Greek yogurt only because I feel like the cottage cheese is a touch umami/salty–not bad by any means, but the yogurt would tame it a bit without adding too much of that fermented tang yogurt's got going on normally!
