
I’m not the biggest fan of nor am I very experienced with blue cheeses— but if given the chance, absolutely try this one out.
I made a cream sauce (butter, a touch of evoo, and starchy water because I couldn’t be bothered to buy cream) with the cheese, then threw in some chopped + toasted walnuts and marinated chicken because my girlfriend and I wanted some extra protein (marinated with soy sauce, chopped ginger + garlic, onion powder, msg, lemon juice and maple syrup). Garnished everything with some fresh cracked black pepper and the syrah-soaked grape leaves used as a rind for the cheese.
Again, please buy this cheese if you can find it! It’s so wonderfully creamy, woodsy, earthy, and incredibly rich. There’s no wonder that it’s won the awards it has!
