• 200 g yogurt

• ¼ oz active yeast
• 2 oz warm water
• 2 tsp sugar (divided)

Icing
• 93 g light cream cheese
• 50 g pumpkin purée
• 20 g protein powder
• 2 oz protein shake (or milk/water as needed)

Instructions

In a small bowl, combine yeast, 2 oz warm water, and 2 tsp sugar. Let sit for 10 minutes until foamy

In a large bowl, mix together yogurt, flour, protein powder, and the yeast mixture until a sticky dough forms. Cover and let rest for 20 minutes to 1 hour to allow the dough to rise slightly

In a small bowl, combine cinnamon and sugar to taste for the filling

Roll out the dough into a rectangle on a lightly greased surface. Brush with egg white, then sprinkle evenly with the cinnamon sugar mixture. Roll the dough into a log and cut into 6 even pieces

Arrange rolls in a baking dish and bake at 350F for 20–22 minutes

While baking, mix cream cheese, pumpkin, and protein powder until smooth. Add protein shake (or milk/water) gradually until desired drizzle consistency is reached

Remove rolls from the oven, let cool slightly, then drizzle with icing
