
made these low carb muffins for my birthday and i was impressed with how they turned out!
i used the duncan hines keto yellow cake mix, and i was initially worried because the reviews are really mixed. some people even said they were completely inedible…
i replaced the oil with greek yogurt, and added vanilla extract, baking powder, and sugar free chocolate chips. they came out very moist – the texture is in between a cupcake and a muffin.
168 cal and 4.4g net carbs each! (24.2g carbs, 7.7g fat, 5.4g protein)
net carbs = 24.2 total – 7.3g fiber – 12.5g sugar alcohols/allulose = 4.4g net carbs
[i subtract allulose carbs completely because it doesn’t impact me, i know some people count half or 2/3 of it etc. i also don’t have a problem with sugar alcohols but you know what works best for you!]

duncan hines keto yellow cake mix = 300g (entire box)
fage 0% greek yogurt = 85g
bake believe semisweet no sugar added chips = 114g
baking powder = 0.5 tsp
3 large eggs
1/2 cup water
mixed and baked at 350F for 22 min
