

More of a side but I just put this together (not an original concept or recipe lol) but I was surprised at how low calorie this came out to be and how tasty! Now I wanna eat this with a lean pork chop 😛
Made 40 ounces aka 5 cups of thick soup! I think it’s pretty tasty and honestly I think the beans kinda tame the squash taste so it’s nicer! According to my lose it app and creating the recipe I did 5 servings (one cup servings) is 66 calories, 14.8 carbs, 229 mg sodium, 3.4 g fiber, 2.4 g sugar and 2.9 g of protein! I may add more beans next time and see how that is for more fiber and protein!
Ingredients:
3 cups of butternut squash cubbed and roasted till soft
5 ounces of rinsed canned cannellini beans
1.5 cups better than bouillon broth
½ cup of water (more as needed for preferred consistency
1 tsp dried ground sage
1 tsp dried ground rosemary
1 tsp dried ground parsley
1 tsp garlic powder
½ tsp onion powder
½ tsp or less salt
½ tsp or to taste pepper
Blend all of it up until smooth, add more water if you want a thinner soup or you may need to adjust for more broth if you want it really thin.
