Yep, turns out the 2-pan method, and using tongs to carefully get all the pasta coated, really makes a difference. Also, super high quality pecorino Romano. I used Banza chickpea pasta, which is “stickier” than wheat pasta, and I think that actually contributed positively here
Featuring a side of roasted veggies, but I decided not to be a heathen and mix them in with the pasta.
