
Just made porkbelly tacos for the first time. I just dried the skin with salt on the fridge for 24h, made a rub of smoked paprika, black pepper and salt and cooked it in the airfryer to get it super crispy.
Then I made pico de gallo. Didnt had much on the fridge so I made an avocado cream using skyr and also some improvised peach sauce with caramelized onions to add some sweet flavour to the mix.
It was greeeeeat!
