
Smoked some ribs yesterday. Had wayyyy too many leftovers so what did I do? Made some Rib Mac ‘n Cheese.
Recipe:
Ingredients
Pasta & Base
• 1 lb short pasta (I used rotini cause that’s what we had in the pantry)
• ½ stick unsalted butter
• 4 tablespoons all-purpose flour
• 2 cups whole milk
• 1 cup heavy cream
Cheese Blend
• 12 oz Gouda cheese, grated
• 8 oz sharp white cheddar, grated
• 4 oz cream cheese
• 2 oz Parmesan, grated
• 1 cup reserved cheese for topping
Seasonings & Flavor Enhancers
• ½ cup sour cream
• 1 teaspoon kosher salt (adjust to taste)
• ½ teaspoon freshly ground black pepper
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika
• ¼ teaspoon ground mustard powder
• ¼ teaspoon nutmeg
• 1 tablespoon fresh lemon juice
Optional Toppings and Mixings
• 1 cup panko breadcrumbs mixed with 2 tbsp melted butter for topping
• Fresh herbs (rosemary and basil) for topping
• Smoked Pork Rib meat, chopped for mixing
• assorted garden veggies (tomatoes, garlic, green onions, green beans) for mixing
Recipe:
1. Par boil the noodles until they’re slightly less than al dente.
2. Make a roux and then add in the milk and cream. Whisk and cook for 5-7 minutes til it thickens. Then remove from burner
3. Mix in cheese, starting with cream cheese.
4. Mix cheese sauce with noodles and other mixings. Put into baking pan and bake at 375 for 15 minutes. Finish in the broiler.
