
Hi!! I want to share some lower calorie meals with you guys that have helped me lose weight.
Meal #1: Lean ground beef with sweet potato and homemade pico.
Ingredients: Trader Joe's Extra Lean Ground Beef, 2 Sweet Potatoes, 2 Tomatoes, 1/4 of an onion, 1 Jalapeño, Lime Juice, Cilantro, Salt, Seasonings.
Cook your ground beef up and divide into 4 portions. Cook your sweet potato (I like to cook mine in the oven at 400F for 15-25 minutes or until tender enough to poke a fork through. I add zero calorie cooking spray and chili-lime seasoning to them.)
Make your pico – cut everything up and add about a tablespoon of lime juice and some salt – store in a container for the rest of the week.
I also love adding some avocado to this.
Calories ~ 4 portions of food for 236 calories per portion.
"Gyro" Low Carb Chicken Wrap:
One serving of Lund's & Byerlys Rotisserie Chicken (or whatever chicken you have), one serving of Trader Joes Fat Free Feta Cheese, One serving of Trader Joes Tzatziki, Some hot sauce (optional), couple pieces of some kale (optional). And one Mission Medium Carb Smart tortilla (the 70 calorie one).
Calories ~ 1 portion for 376 Calories.
Shrimp Noodle Bowl –
1 serving of miracle noodle (I like the angel hair one), 1 serving of Aldi Fremont Cooked Shrimp, some chili paste, cilantro and lime.
Cook your shrimp and add the chili paste, some lime and any seasonings you want. Then rinse the noodles off and add them. Put some cut cilantro on at the end.
Calories ~ 1 Portion 190.
Egg Salad on Low Carb Bread-
2 slices of sarah lee white low carb bread, 5 eggs cooked then cooled down and de-shelled, 1 TBSP walmart brand Lite Mayo, paprika, 1 TBSP mustard, salt, pepper, onion powder, garlic powder, lettuce.
Mix the egg salad together then save half of the portion and eat the other half. Put on your toasted white bread with some lettuce.
Calories ~ For 1 Portion: 300
Oven Pizza
1 Mission Medium Carb Smart Tortilla, 17 Slices of Hormel Turkey Pepperoni, Oregano, Red Pepper Flakes, Garlic powder, Trader Joes Sun dried Tomatoes (in the resealable bag), 1 Baby bell Cheese. Trader Joes Tomato-Basil Pasta Sauce.
Preheat oven to 350. Grease your baking sheet with 0 calorie spray. Place your tortilla on it, and add 1/2 cup of sauce (1/4 cup if you want it less saucy,) put some seasonings on the sauce, then add your pepperoni, torn up cheese and sun dried tomatoes (I like about 3 TBSP of them). Cook for 15-25 minutes (depends on how crispy you want it, just check the underside of it)
Calories ~ 1 Portion for 380 Calories.
