
Ingredients
For the marinade:
200g firm tofu, pressed and cubed
3 tbsp unsweetened vegan yoghurt
1 tbsp gram flour
1 tbsp lemon juice
1 tbsp neutral oil
2 garlic cloves, minced
1 tsp grated ginger
1 tsp ground cumin
1 tsp ground coriander
½ tsp turmeric
1 tsp garam masala
½ tsp chilli powder
½ tsp smoked paprika
½ tsp salt
For the skewers:
1 red pepper, in chunks
1 yellow pepper, in chunks
1 green pepper, in chunks
1 red onion, in petals
Wooden or metal skewers
Method

Mix all marinade ingredients in a large bowl until smooth and fragrant.

Toss in the tofu cubes and coat thoroughly. Cover and marinate for at least 1 hour in the fridge (or overnight).

Soak wooden skewers if using. Prep the veg into pieces similar in size to the tofu.

Thread tofu, peppers, and onion onto skewers in alternating colours, packed snugly.

Heat a griddle, BBQ or non-stick pan with a touch of oil. Cook skewers over medium-high heat, turning every few minutes until the tofu is golden and crisp, and the veg is lightly charred — around 10–15 mins total.

Serve with lemon wedges, herbs, and dips like vegan raita or chutney. Great in flatbreads or salads too.
