Smoked Greek Style Ribs

Ingredients:
* 2 racks of St. Louis Style or Baby Back ribsĀ 
* Dijon mustard approx. 3 tablespoonsĀ 
* 2 tablespoons all purpose or lemon pepper seasoningĀ 
* Tzatziki SauceĀ 
* Lemon WedgesĀ 

Ingredients for Greek Seasoning:
* Ā 1 tbsp dried oregano
* 1 tbsp dried parsley
* 2 tsp dried thyme
* 2 tsp dried dill weed
* 1 ½ tsp dried rosemary, crushed
* 1 ½ tsp garlic powder
* 1 tsp onion powder
* 1 tsp kosher salt
* 1 tsp black pepper

Ingredients for Spritz:
* 2 cups water
* ½ cup lemon juice 
* 3 garlic cloves crushedĀ 
* 1-2 rosemary sprigs
* 1-2 fresh oregano sprigsĀ 
* ½ tablespoon white wine vinegar 
* 2 teaspoons olive oilĀ 

Directions:
* Peel off the membrane of both racks of ribsĀ 
* Coat both sides with Dijon mustard this will act as a binder so the seasoning sticksĀ 
* Season both sides with your all purpose seasoning and then layer on your homemade greek seasoningĀ 
* Let this ribs sweat on your cutting board while your smoker heats upĀ 
* Set your smoker to 250 degrees(Im using cherry wood to complement this cook)
* Place your ribs on indirect heatĀ 
* Assemble your spritz and spritz your ribs every 30 minutesĀ 
* Once your ribs hit an internal temperature of 165-175 degrees bump up your smoker temperature to 275 degrees & continue spritzing every 30 minutesĀ 
* Once your ribs hit an internal temperature of 190 degrees and are probe tender they are done. Do not get hung up on internal temp once they are tender they are doneĀ 
* Allow the ribs to rest for 15-20 minutes before slicingĀ 
* Slice your ribs down each boneĀ 
* Hit your ribs with some fresh lemon juice & olive oilĀ 
* Plate up with some tzatziki sauce and enjoy!
