
these are russian-style syrniki with low fat cottage cheese, chia seeds, and flax seeds! you could easily scale down on cals by not using sugar (i used a tsp of brown sugar), toppings, or butter, but i went with something a bit heavier because it's yummy and i have a day ahead of me. i hope this inspires someone to try syrniki to satisfy your pancake craving!!
