• 2 eggs
  • ¾ cup (180 g) Greek yogurt
  • 1 tsp baking soda
  • 1 tsp stevia (or your favorite sweetener)
  • ½ tsp coconut oil (for greasing)

  • Separate the egg whites and yolks

  • Mix yolks with yogurt, stevia, and baking soda

  • Beat egg whites to stiff peaks

  • Gently fold the whites into the yogurt mix — don’t overmix

  • Grease your baking dish with a little coconut oil

  • Pour the batter in and smooth the top

  • Bake at 320°F (160°C) for 30–40 minutes until puffed and golden

  • Let it cool before slicing — the texture is soft and fluffy!
