Tampering around with this recipe but thought this batch was good enough to share! Next time I’m planning to add some more pumpkin puree for a stronger flavor.
Recipe: Makes 12 Muffins
Wet Ingredients:
- 1 cup Pumpkin Puree
- 1/4 cup unsweetened applesauce
- 90g egg whites
- 224g blended cottage cheese (you can also substitute Greek Yogurt)
- 1 tsp Vanilla Extract
- 2 tbsp of Sugar Free Maple Syrup
Dry Ingredients:
- 1.5 tsp Baking Powder
- 1/2 tsp Baking Soda
- Pinch of Salt
- Spices to taste (cinnamon, nutmeg, cloves)
- 90g whey/casein protein powder blend (I used pumpkin pie by PE Science but any flavor should do. If you use vanilla I recommend probably adding some more spices to really get a pumpkin flavor)
- 120g of flour (I used Fiber Gourmets low calorie flower which comes out to 50 calories per 1/4 cup. If you use regular flour, which is around 110 calories per 1/4 cup each muffin will come to around 120 calories instead but macros stay approximately the same)
- 1/4-1/2 cup of stevia (I used brown sugar stevia but white sugar stevia is fine as well)
- 88g of Sugar Free Chocolate Chips
Directions:
Combine all the ingredients and divide into 12 muffin tins. Bake @350 for ~25 minutes or until toothpick comes out clean.
This can also be used to make bread as well! If you have any tweaks you try and like better let me know!!
