Basically brown the apricots in a frying pan with the oil (accidentally burnt them this time) then pour over the honey while the heat is still on. Then crumble the feta on top and I crushed the pistachios in a mortar n pestle.

Could swap the feta for a lighter version but it was the cheapest at the supermarket. Not a lot of protein but my other planned meals have a fair amount.
