cut the one slice of bacon up into smaller pieces, cook it in pan until the fat coats the pan
mix the shrimp (or protein of choice) with all the seasonings. i used cajun, onion, garlic, old bay spice, umami, salt, and black pepper. but tbh, don't stress about the spices, and just use whatever is in your kitchen (i don't count the calories of spices personally)
i used greek yogurt + lime juice as sour cream dupe. just smear the yogurt and squeezed lime inside the burrito
throw the shrimp into the burrito, but don't throw in or wash the oils/seasonings still on the pan
i added avocado to the burrito. for a little more volume, you can add rice or beans or cheese. just don't overfill the burrito because it will fall apart
fold the burrito, throw it back in the same pan to pan-fry a bit. throw some cheese on top and flip it around for the melted cheese to stick to the burrito. it also absorbs the oils/flavors/seasonings from beforehand
and finally, i topped the burrito with mayo. a nice side dish would be some airfried veggies like broccoli or brussel sprouts or carrots
