  1. Couldn’t even finish it, it’s bigger than it looks in the photo! Ingredients in the second photo, all from Trader Joe’s.

    My portion (pictured) was 2 cups of Riced Cauliflower Stir Fry bulked up even further with some grated zucchini and edamame, 8 Chicken Cilantro Mini Wontons, and some air fried Shishito Peppers. Around 400 calories for the whole meal which means calories left over for dessert tonight!

  2. I ate a boatload of Shishito peppers tonight. I love them as a side when I grill.

    Those cilantro chicken wontons are amazing! I make a huge bowl of them (4 for 50 cals IIRC) with a dollop of chili oil and feel amazingly satisfied with calories to spare. Great idea adding veggies!
