
I found this recipe on Facebook and thought it sounded pretty good! (I edited it a bit) Each egg cup is 26 calories with 2.5g of protein. I ate 8 for lunch for 208 calories and 20g of protein!
5 eggs
1 cup fat free cottage cheese
4 slices of pepper jack cheese (broken up into smaller pieces)
~2 Cups baby spinach
Salt, Pepper, Garlic Powder and Onion Powder (follow your heart)
1/2 C Diced ham
Put everything except the ham into a blender, blend until smooth. Pour mixture into mini muffin pan (use an oil spray first). Add around 4-5 pieces of Diced ham to each cup. Bake at 350 for about 24 minutes.
