

Hi, all. I kind of happily stumbled upon this (though others have probably been doing this same thing of adding beef flavor to turkey long before me) when I didn't have my usual chicken bouillon base to add to my meatloaf, so I used beef instead, and man, is the flavor fantastic! I use dairy-free panko breadcrumbs due to my husband's severe intolerance, but you don't have to. It's also unglazed because neither of us is a fan of sticky, sweet sauces, and it still comes out juicy and delicious! He even says it's his favorite thing I make. 🩷 Anyway, the recipe is 2 tbsp olive oil, 1 small thin-skinned onion, 1/2 a red bell pepper, 1/2 a green bell pepper, 2 large garlic cloves, 2 tbsp tomato paste, 1/2 cup plain panko breadcrumbs, 1/4 cup water, 1 lb 93/7 ground turkey, and 1 tbsp Better Than Buillon beef base. Dice up small the onions and bell peppers and saute them in the oil until softened, add the minced garlic and cook until fragrant, add tomato paste and cook until its color really deepens but before burning. Let this all cool a bit before adding it to a large bowl containing the egg, breadcrumbs, water, beef base, and ground turkey. Mix it all very well (I unashamedly overmix), shape into a loaf (wet your hands just prior to avoid the meat sticking so much to you as you shape it) on a cookie sheet lined with aluminum foil, and bake for 35 minutes at 350 in a preheated oven. After resting, if you cut it into 6 portions, each serving is 200 calories; 4 portions is 300 calories. With this recipe, I don't see myself ever going back to beef meatloaf. It's so good.
