Spiced scrambled egg whites (1/2 tbsp EVOO, 4x egg whites, 1/4 cup spinach, sprinkle of salt, turmeric, cumin seeds & cayenne pepper).
2x nitrate-free turkey sausage patties
1x keto bagel thin w/ strawberry cream cheese and a sprinkle of black chia seeds
100g of thawed frozen raspberries
• Meal #2
Vegan Italian meat sauce and broccoli (1 tsp EVOO, 1.5 tsp of minced garlic, 1x cup of Morningstar veggie griller crumbles, 100g of steamed frozen broccoli, 1/4 cup of marinara sauce, sprinkle of salt, black pepper, Italian seasoning, onion powder, oregano, red chili flakes & 1 tbsp of grated Parmesan cheese)
1x homemade gluten-free almond flour bread recipe that I turned into muffins for easy serving
1/2 tbsp of kerrygold grass fed butter
• Snack
3 cups of simply salted popcorn

Felt much better today so I did a little baking 😋
The almond flour muffins turned out really well!
They’re 177 cals (8P 6C 15F & 3g of Fiber) so they’re fairly dense but I tend to have issues sometimes getting enough fat in my daily intake without just adding more oil to my meals so I’m excited to be able to have a batch of these in the fridge to pull from when I need to :D.
Final update: I’ve been doing ~1200 for a few weeks now with slow but steady weight loss (I’m 5’0” tall and fairly sedentary) and I’ve been really pleased with the changes in my approach to food. I’ve specifically been working on eating small, nutrient dense portions to re-regulate my fullness cues and, in the past week or so I’ve really noticed the lack of hunger between meals due to upping my proteins, healthy fats, and fiber while lowering my carbs. I can’t wait until I hit my goal weight (about 7-10 more pounds) so I can inch my way back up to maintenance and keep up with the moderate low carb way of eating. It feels sustainable and I’m really excited to be able to have some more flexibility to add more variety back into my meals again 😅
